Join Chef Pike for an intensive two-day professional program where he reveals the team Taiwan's authentic 2025 World Champion Panettone formulas. Under his direct guidance, you will produce two signature Panettone varieties:
• Classic Milanese Panettone
• Chocolate Panettone
(***Because the panettone needs to cool overnight, the finished product can only be picked up from the classroom on March 9.)
This masterclass goes far beyond baking. You will learn how to build, strengthen, and maintain Italian natural yeast cultures using four key fermentation systems:
• Liquid starter
• Water-submerged starter
• Bound stiff-starter (legatura)
• Traditional stiff starter
You will gain a clear understanding of the science, fermentation principles, and maintenance techniques behind a strong, stable natural yeast — the true heart of world-class Panettone.
Chef Pike Yang | Brave Artisan Bakery
Chef Pike Yang is the founder and head baker of Brave Artisan Bakery, with two warmly loved locations in Guanmiao and Chang Jung University district in Tainan City, Taiwan. His breads quickly earned a loyal following among local residents for their honest craftsmanship and deep, natural flavour.
In 2017, he published his first book, “More Than Baking — A Complete Guide to Artisan European Bread,” sharing his passion and technical knowledge of traditional hand-crafted bread making.
In 2024, Chef Pike entered the Panettone World Championship Taiwan Selection. To ensure that the winning Panettone reflected both professional quality and true market appeal, the organizers invited a large group of everyday consumers to serve as popular-vote judges in the final round. During the event, each Panettone was evaluated across multiple criteria including aroma, flavor, texture, structure, and presentation.
After nearly an hour of tasting and detailed discussion, World Panettone Champion 2023, Chef Maurizio Bonanomi, personally announced the winners. Chef Pike Yang was awarded the “Most Popular Award” for producing the Panettone that captured the hearts of the public.
As a member of Team Taiwan, Chef Pike went on to compete on the world stage and, together with his teammates, won the 2025 Panettone World Championship in Italy — bringing global recognition to Taiwanese artisan baking.
麵包冠軍 / 布雷夫手作烘焙 Chef楊世均
杨师傅在家乡关庙和台南长荣开了两家手工面包店,都受到了当地居民的热烈欢迎。2017 年,他还出版了《不只是烘焙,欧式面包手作全書》一书,分享他对手工面包的专业与热情。
2024 年,Chef Pike 參加 Panettone 世界錦標賽台灣預選賽。為了兼顧專業評審與市場接受度,主辦單位特別邀請眾多一般消費者擔任「大眾評審」,從香氣、口感、結構、外型等面向進行評比。經過近一個小時的盲測品評後,由 2023 年世界聖誕麵包杯冠軍主廚 Maurizio Bonanomi 親自公布結果,Chef Pike 榮獲 「最佳人氣獎」,成為最受大眾喜愛的 Panettone。
之後,Chef Pike 以 Team Taiwan 成員的身分,代表台灣站上世界舞台,並於 2025 年義大利舉辦的 Panettone World Championship 中,與團隊一起奪下世界冠軍,將台灣手作烘焙實力推向國際。
